Beef Jerky spices are a favorite for so many people because everyone loves beef jerky. Then when you think you could make some yourself, the love just comes through. So how do I start when picking a spice for my beef jerky or wild game jerky. Start by dividing the flavorings into three different groups. Start with base flavors, then secondary liquids, third dry spice mix, by following these steps anybody can make great flavors for their home made jerky.

You first need to think about what flavors lean toward your liking. Start by identifying which base flavor liquid you prefer. There are not too many to choose from. Some people like a flavor of Worcestershire, some a soy sauce base, some use ketchup, and some mix and match some or all of these flavors into the base liquid for the meat. You can add olive oil as well it increases the volume of the liquid. Do not add too much just a couple of teaspoons. From this starting point there are thousands of different ways to go. Do make sure you use enough liquid to cover the meat completely. My favorite way to marinade is to use a zip lock bag and just throw everything inside. Be sure to squeeze all of the air out of the bag, Oxygen is not your friend when marinating.

Second, let's talk about adding flavor by using liquids. If you wan to add flavors that are not as strong as spices other liquids are the way to go. If you want a sweet flavor add some fruit juice. I recommend orange, apple, cherry, or pineapple. Some people have favorite liquor like Jack Daniels or maybe a favorite beer. Both can add a great flavor if you desire. You can also add hot pepper sauces if you like it spicy.

Third, you will need some spices. Again you are only limited by what your mind can dream up. I like some garlic powder, ground black pepper, cayenne pepper, and cajun seasoning. You could go with some rosemary, parsley, red pepper flakes, thyme, oregano, basil, dill, and the list goes on and on. Experiment often, because you get to eat the all of the mistakes and successes. Some beef jerky is better than others, but very seldom do I try one that I just hate.

Beef jerky spices are as varied as the people who eat them. So the next time you try to make your own beef jerky or wild game jerky separate your flavors into three groups for quick and easy marinating.
